Recipes for Christmas Eve Dinner for Two1 12-17 lb. fresh turkey 1 stick butter 2 packets G Washington Seasoning and Broth 2 sticks celery 2 carrots 8 ozs. chicken broth 1/4 cup Cinnamon Cider Syrup 1 lemon salt and pepper Wash and dry turkey. Place on a large and deep baking dish. Squeeze lemon all over and in cavities to refresh. Sprinkle with salt and pepper. Best if left to rest for several hours. Wash and scrape carrots and cut into long slivers. Wash and cut celery likewise. Place vegetables in bottom of roasting pan, place turkey on top and butter all over. Sprinkle with packets of G Washington's Seasoning and salt and pepper. Cover wings with foil. Pour broth over and pour cinnamon cider over. Roast at 350 for 6 hours. Baste with juices occasionally and tent with foil if browning to fast. Debbie's Orange, Pineapple, and Cherry Glaze 1/2 cup fresh orange juice 1/2 cup pineapple juice cherry juice from 1 10 oz. jar of cherries 3 T. brown sugar 2 T. cornstarch dissolved in 2 oz. cold orange juice Put the juices in a microwave-safe bowl along with the brown sugar. Let heat and allow brown sugar to dissolve. Cook on 50 power for 5 minutes. Remove from microwave. Stir in cornstarch dissolved in cold orange juice. Return to microwave and cook on HIGH for 4 minutes. Remove the bowl and see if the sauce has thickened. If it has, put the sauce in a pretty crystal creamer (or any small pitcher) and pour over ham. If it hasn't thickened properly, continue to microwave on HIGH, checking the glaze every three minutes. Roast Sticky Chicken Dinner Recipe 4 tsp. salt 2 tsp. paprika 1 tsp. cayenne pepper 1 tsp. onion powder 1 tsp. thyme 1 tsp. white pepper ½ tsp. garlic powder ½ tsp. black pepper 1 large roasting chicken 1 cup chopped onion In a small bowl, thoroughly combine all the spices. Remove the giblets from chicken; clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag; seal and refrigerate overnight. When ready to roast the chicken, stuff cavity with onions and place in a shallow baking pan. Roast, uncovered, at 250°F for 5 hours. After the first hour, baste the chicken occasionally (about every 30 minutes or so) with pan juices. The pan juices will start to caramelize on the bottom of the pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let the chicken rest about 10 minutes before carving. Mama's Favorite Punch Recipes for Christmas Dinner 1 half-gallon of lime sherbet 1 2-liter bottle of ginger ale - All of the ginger ale will not be used Allow lime sherbet to soften in a punch bowl. Add ginger ale slowly while mixing with an electric mixer. Use just enough ginger ale to make the punch easy to pour. Punch is ready when all of the sherbet has mixed with the ginger ale and is able to be poured into punch cups. Warm Mexican Ground Turkey Salad Salad Recipe for Christmas Dinner 1 lb ground turkey 3 zucchini squash sliced into rounds, then cut in half 1 onion diced 3 Tbsp canned diced green chilis 1 cup canned or frozen yellow kernel corn 1 Tbsp olive oil 1 Tbsp kosher salt 1/2 tsp white pepper 1 tsp cumin 1/2 tsp coriander Dash dried cilantro 1 cup cooked brown rice Diced fresh tomato Tortilla chips Salsa Guacamole 1 bag chopped romaine lettuce In a large sausepan, heat olive oil. Add diced onion and saute until soft. Add crumbled turkey to pan with salt, pepper, cumin, coriander and cilantro. Saute until the turkey is just cooked (no longer pink) over medium heat. Add squash, corn, and diced chilis and stir. Lower heat and cover for about 10 minutes or until squash is soft. Add cooked brown rice to mixture and lightly toss together. Serve on large plates layering chips, then romaine, and then turkey mixture. Sprinkle with tomatoes and a dollop of guacamole. Serve with salsa or ranch dressing if you prefer. Best if served warm. A low fat taco salad made with ground turkey. To lower the fat even more, use low fat dressing and light sour cream instead of guacamole. |
