To lower the fat even more, use low fat dressing and light sour cream instead of guacamole. 1 lb ground turkey 3 zucchini squash sliced into rounds, then cut in half 1 onion diced 3 Tbsp canned diced green chilis 1 cup canned or frozen yellow kernel corn 1 Tbsp olive oil 1 Tbsp kosher salt 1/2 tsp white pepper 1 tsp cumin 1/2 tsp coriander Dash dried cilantro 1 cup cooked brown rice Diced fresh tomato Tortilla chips Salsa Guacamole 1 bag chopped romaine lettuce In a large sausepan, heat olive oil. Add diced onion and saute until soft. Add crumbled turkey to pan with salt, pepper, cumin, coriander and cilantro. Saute until the turkey is just cooked (no longer pink) over medium heat. Add squash, corn, and diced chilis and stir. Lower heat and cover for about 10 minutes or until squash is soft. Add cooked brown rice to mixture and lightly toss together. Serve on large plates layering chips, then romaine, and then turkey mixture. Sprinkle with tomatoes and a dollop of guacamole. Serve with salsa or ranch dressing if you prefer. Best if served warm. Number of servings: 4 Mexican Recipe - Lasagna Corn tortillas are used in place of products made with flour. A tasty main dish for people with and without an allergy to wheat. 1 pound ground pork 1 can re-fried beans 8 oz package shredded mozzarella 8 white corn tortillas 1 jar tostitos restaurant style salsa 1/2 package frozen white shoepeg corn 1/2 small onion minced Cooking spray 1 container sour cream Preheat oven to 375 degrees. Brown the ground pork and onion together. Add the corn and then 3/4 of the salsa. In a round glass baking dish, spray the bottom of the dish. Cut 7 of the 8 tortillas in half and spread with re-fried beans. Be sure to use the whole can! Set four of the half pieces on the bottom of the dish, bean side up. Use another half to cover the whole bottom. (5 half pieces on the bottom layer). Pour in half of the mixture from the frying pan, then cover with cheese. Layer five more halves of the tortillas bean side up again. Pour in the rest of the mixture and cover with cheese. Layer the 4 halves and one whole tortilla on the top bean side down this time. Cover with the remaining salsa the rest of the cheese. Cover and bake for 20 minutes. Remove cover and bake an additional 10 minutes. Let sit for 5 minutes before serving with a dollop of sour cream. Smothered Pork Chops 4 - 6 Pork chops 1- 16oz jar Tex-Mex Tejano Salsa Salt and pepper or use Tony Chachere's Creole Seasoning Sprinkle pork chops lightly with Tony Chachere's or seasoning or your choice. Brown chops in skillet (both sides). Pour 1-16 oz. jar of your choice of Tejano Salsa (mild, medium, or hot) over pork chops and simmer on medium to high heat for approximately 15 minutes. Now this is Tex-Mex style pork chops! |
