Italian Recipes for Christmas Eve


Zucchini Lasagna Recipe

2 tbsp olive oil
4 large zucchinis, thinly sliced lengthwise
4 large tomatoes, thinly sliced
2 Vidalia onions, very thinly sliced
2 tbsp chopped fresh basil
1 tbsp chopped fresh thyme
salt and freshly ground pepper
1 cup grated cheese

Preheat the oven to 400°F.
Spread 1 tablespoon of the oil on the bottom of a large flameproof gratin dish or shallow casserole. Arrange half the zucchini over the bottom, then add a layer of half the tomatoes and then half the onions.
Add half the basil and thyme and sprinkle with salt and pepper. Add half the cheese.
Repeat the layers with the remaining ingredients, topping the remaining cheese. (The dish can be made an hour or two ahead up to this point.)
Bake the lasagna for about 30 minutes, or until the zucchini is tender and the cheese is melted. Place under the broiler for the last 3 minutes of cooking. Serves: 4


Italian Christmas Eve Tomato Pasta Bake

3 cups penne pasta
1 lb. ground round
2 cans (14.5 oz.) Diced Tomatoes
1 can (15 0z.) Tomato Sauce
1 green bell pepper, chopped
1 cup fresh mushrooms, chopped
1 tsp. basil
1/2 tsp. salt
2 cups (4 0z.) Italian blend cheese

Preheat oven to 350 F. Prepare a 13x9x2" baking dish with nonstick cooking spray. Cook penne pasta according to package directions. Drain well; cover and keep warm. In prepared baking dish, brown ground round in microwave oven; drain well. Add diced tomatoes, tomato sauce, green bell peppers, mushrooms, basil and salt; mix well. Return to microwave and cook on high for 4 minutes. Remove from microwave and add pasta; mix well. Cover and bake in oven for 15 minutes. Remove from oven and sprinkle with cheese. Bake uncovered an additional 5-10 minutes or until cheese is melted.
Use fresh basil for fuller flavor in this Italian casserole that has beef, tomatoes, and other vegetables.


Xmas Eve Italian Fish Recipe

2 tablespoons minced fresh parsley
1 (15 ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese
1 1/2 lbs flounder fillets
salt
dried oregano
pepper

Place flounder fillets in a lightly greased 13x9 inch baking dish.
Sprinkle fillets with oregano, salt, and pepper.
Pour spaghetti sauce over fillets.
Sprinkle with parsley.
Bake, uncovered, at 350 degrees for 20 minutes or until fish flakes.
Top with cheese and bake 5 more minutes.


Italian Chicken Cacciatora

1 chicken, cut up
500 g diced tomatoes

Brown the pieces of chicken in the pressure cooker with a little bit of "OlioCarliEn" for about 15 minutes, turning them from time to time.
Add the condiments, all minced together:

1 medium onion
1 garlic clove
thyme
a few basil leaves
parsley
1 carrot
1 celery rib

Stir everything well, then add the tomatoes, a little less than two glasses of water, and one bouillon cube.

Close the pressure cooker; from the moment it "whistles", cook for 15 minutes with medium/low heat. Double the cooking time (at least) if you are using a regular pot.


Black Bean Pasta
Christmas Eve

4 ribs of celery, chopped
2 cloves of garlic, chopped
1 tsp of crushed red pepper flakes(optional)
2 Tbsp of olive oil
1 can of black beans(not drained)
1 can of diced tomatoes (drained) or 3 roma tomatoes (chopped)
8 ounces of penne or ziti pasta cooked according to directions
Parmesan cheese to sprinkle on top

Heat olive oil in pan and saute celery for 2 minutes and than add garlic. Saute for three more minutes and then add bean and tomatoes. Once the pasta in cooked aldente, drain well and add to the skillet. Continue to cook for three more minutes until all indgredients are combined. Serve with parmesan cheese.
