Irish Potato Casserole Recipe

8-10 medium potatoes, peeled  
1 (8 oz) pkg cream cheese, softened  
1 (8 oz) carton sour cream  
1/2 c. butter or margarine, melted
1/4 c. chopped chives
1 clove garlic, minced  
2 teaspoons salt  
Paprika

These mashed potatoes have cream cheese, sour cream, butter, chives and garlic stirred in. They're chilled overnight and baked the next day.

Cook potatoes in boiling water, about 30 minutes or until tender. Drain and mash. Beat cream cheese with an electric mixer until smooth. Add potatoes and remaining ingredients except paprika. Beat just until combined. Spoon mixture into a lightly buttered 2-quart casserole, sprinkle with paprika. Cover and refrigerate overnight. Remove from refrigerator 15 minutes before baking. Bake covered at 350 for 20 minutes. Uncover and bake at 350 for 15 to 25 minutes more or until thoroughly heated.


Irish Christmas Dessert Recipe

1 can crushed pineapple
1 (3 1/2 ounce) package instant pistachio pudding mix
1/2 cup chopped walnuts
1 cup miniature marshmallows (optional)
1 (8 ounce) container non-dairy whipped topping, defrosted (Cool Whip)

Combine pineapple and juice with pudding mix.
Add nuts and marshmallows (if desired) and stir until combined.
Fold in Cool Whip and mix well.
Place in individual serving dishes or a medium bowl.
Chill for at least an hour.


Christmas Irish Honey chicken with lemon and garlic

3 lemons
3 tablespoons of fresh rosemary, leaves stripped from the stalks.
3 tablespoons of clear honey
8 chicken thighs and drumsticks
50g of butter
2 cloves of garlic, finely chopped
750g of potatoes, scrubbed or peeled and cut into 2 cm square chunks

Preheat oven to 200 C or Gas mark 6.
Squeeze the juice from two of the lemons.
Gently melt the butter in a small saucepan, adding the lemon juice,
garlic, honey and rosemary.
Season well with salt and pepper.
Arrange the chicken in one layer in a shallow roasting tin. Place the
potatoes around the chicken and drizzle the lemony butter over the potatoes
and chicken turning them so they are evenly coated.
Cut the third lemon into wedges and put amongst the chicken and potatoes.
Roast the chicken for one hour until the juices run clear and the
potatoes golden. Stir twice during the cooking time.
Serve with a green salad and some crusty bread.
Preparation: 15 minutes


Angels on Horseback

12 slices of Shannon Traditional Regular Bacon
24 oysters.

Cut each slice of bacon across in two. Stretch the pieces by placing them flat on a board and stretching them with the back of a knife. Place one oyster on each bacon slice and wrap up. Secure with cocktails or skewers. Grill under a medium heat, turning frequently, until the bacon is crisp. Drain on kitchen paper. Serve plain or on rounds of hot buttered toast.


Irish Shepherd's Pie

This shepherd's pie combines minced beef, onion, carrots, chicken broth, Worcestershire sauce, thyme and a small amount of tomato puree spread in a pie plate and topped with a mixture of cooked potatoes, butter, cream and egg yolk.


1 onion, chopped
1/4 cup vegetable oil
2 lbs minced beef
3 tablespoons Worcestershire sauce
Leaves from 2 sprigs of thyme
1 teaspoon tomato puree
3 carrots, peeled and diced
14 oz. can chicken stock or broth
3 lb. potatoes, peeled and cubed
7 fl. oz. pouring cream
4 oz butter
1 egg yolk, beaten

Saute onion in oil until soft. Add beef; cook until brown; drain. Then add Worcestershire sauce, thyme, tomato puree, carrots and stock. Cook on low heat for 45 minutes. Transfer to pie dish. Meanwhile, cook potatoes in boiling water until tender; drain. Then return to pan, add cream, butter and egg yolk. Add salt & pepper, if needed. Cover beef mixture with potatoes. Place in preheated 350F oven for 20 minutes.

Note:Simplicity is the key to this dish. Great to prepare in advance, but reheating will take about 40 minutes.
