German Christmas Cookies Recipe

1 c. butter
1 1/2 c. sugar
Cream well.
2 eggs
3 c. flour, sifted

Mix in order given and roll out and cut in desired shapes. Can frost.


Hartshorn German Christmas Cookies

2 c Sugar
1/2 ts Salt
2 ts Vanilla
2 Eggs
1/2 c Boiling water
1 c Milk
1 3/16 c Shortening
Flour to stiffen
1 tb Hartshorn
1 oz Anise seeds

Mix sugar, salt, shortening, eggs,and milk.

In a separate bowl, dissolve the Hartshorn in the boiling water. Make sure it is completely dissolved.
Add vanilla and anise seeds to the sugar mixture.
Add hartshorn mixture to sugar mixture.
Add enough flour to the sugar mixture to stiffen and not to be sticky. It may require 4-5 pounds!
Roll out dough on floured surface, and cut with cookie cutters.
Bake immediately after mixing in a moderate oven (325-350F) for 10-15 minutes.


German Sausage Fry

4 sausages (assorted bratwurst, knackwurst, weisswurst, wieners, or your choice)
1/4 cup beer
2 tablespoons German mustard (spicy)
1 cup onions, chopped into large chunks
3 tablespoons vegetable oil

Steam sausages 8 to 10 minutes.
While sausages cool enough to handle, saute onion chunks in oil until they soften.
Remove onions from pan and set aside.
Slice sausages into large chunks and add to frying pan.
Saute until sausages begin to brown.
Return onions to pan, add beer and mustard.
Stir until mixture is warm.


GERMAN CHRISTMAS HARD CANDY

3 3/4 c. sugar
1 c. water
1 1/4 c. Karo syrup
Cinnamon flavoring oil
Red food coloring

Mix ingredients (except oil) in a 4 quart saucepan and cook rapidly until syrup reaches 300 degrees by candy thermometer. Do NOT stir while cooking. Have a cookie sheet ready when syrup is done. Cover bottom of cookie sheet with powdered sugar.

When syrup is 300 degrees remove from heat and add 2 teaspoons flavoring oil and 5 drops food coloring. Stir to mix (until it stops bubbling). Pour into cookie sheet. When cool enough to handle, cut with kitchen shears. Work fast as it hardens quickly.


German Xmas Potato Noodles

4 large potatoes
1 egg
2 cups flour
nutmeg butter for frying or topping
bread crumbs
salt

Cook and peel potatoes, and mash. Mix with egg, flour and seasoning. On a floured bread board, work into a firm dough, adding extra flour if needed. Shape dough into large rolls. Slice rolls, then slice these slices into the thinnest possible ribbons, or noodles. Cook noodles in salted water until they float to the surface. Drain, fry briefly in hot fat. Or serve topped with browned butter and bread crumbs.


GRÜNE BOHNEN MIT DILL

9 oz cut green beans, frozen
1/3 cup boiling water
1 beef bouillon cube
1 teaspoon dill weed or dill seed
2 tablespoons butter

Place frozen green beans in saucepan with boiling water, bouillon cube, and dill. Cover; bring to a boil. Separate beans with a fork, reduce heat and simmer for 10 minutes or until tender. Drain. Stir in butter and serve.


GRIESSKLÖSSCHEN


1 egg, beaten
1 tablespoon butter
Pinch of salt
1/4 cup cream of wheat of Farina
Chicken broth

Mix well, refrigerate a least 2 hours. Drop by 1/4 teaspoonfuls into gently boiling chicken broth. Makes a tiny star like appearance, very tasty and easy to eat.
