Easy Christmas Pecan Snowball Cookies Recipe

1/4 pound butter or margarine
1 cup flour
2 tablespoons sugar
1 teaspoon vanilla
1 cup chopped pecans
1/4 teaspoon salt (optional)
powdered sugar

Combine all ingredients (except powdered sugar) and shape into balls.
Bake in a 350° oven for 15 minutes.
Roll in powdered sugar while hot.
Cool, and roll again in powdered sugar.
Quick and tasty!


Easy White Christmas Cookies Recipe

1/2 cup butter
2/3 cup granulated sugar
1 tsp. vanilla
1 egg
1 cup plus 2 tbsp. all-purpose flour
1/2 tsp. baking soda
1 cup flaked coconut
6 oz. white chocolate, cut into chunks or white chocolate chips
Powdered sugar

Beat butter and sugar together until creamy. Beat in vanilla and egg.

Combine the flour and baking soda. Beat into the butter mixture.

Stir in the coconut and white chocolate. Form a dough.

Drop by teaspoons onto a buttered cookie sheet.

Bake at 350 degrees F for 15 minutes. Cool a minute before removing a rack to complete cooling.

Sift powdered sugar over cookies until covered with a "Blizzard of Snow".

Serve these cookies for Christmas. Place on a silver plate and decorate with a sprig of holly.


Chewy Chocolate Cookies

1&1/4 cups butter, softened
2 cups sugar
2 eggs
2 tsp. vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
2 cups semisweet chocolate chips

Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Add eggs and vanilla; beat well. Sift flour, cocoa, baking soda and salt. Blend into creamed mixture using low speed on mixture. Stir in chips with a wooden spoon. Drop by teaspoons onto ungreased cookie sheet. Bake 8-9 minutes. Do not overbake. Easy cookies will be soft. They will puff while baking and flatten while cooling. Cool slightly on cookie sheet; remove from sheet onto wire rack to cool completely.

Tips: Don't overbake these chewy chocolate yummy cookies. They have a double dose of chocolate from the cocoa and chocolate pieces.


Christmas Holly Wreath Cookies


1/2 cup margarine
30 large marshmallows
1/2 teaspoon vanilla
1 1/2 teaspoons green food coloring
3 1/2 cups corn flakes
1 ounce red hot candies

Melt margarine with marshmallows in saucepan, stirring to mix well; remove from heat. stir in vanilla and food coloring. Add corn flakes; mix gently with a wooden spoon. Drop easy by teaspoonfuls onto waxed paper; shape into wreaths with greased fingers. Press cinnamon candies onto wreaths while still warm. Let stand for several hours or until cool. Makes 24 wreaths.


Quick and Easy Chocolate Cookie Recipe

1/2 cup butter
1/4 cup plus 3 tablespoons sugar
1 egg
1/2 cup cocoa
2 cups all purpose flour, sift before measuring
1 teaspoon baking powder
1/2 teaspoon baking soda
vanilla extract

Cream butter; add sugar gradually, and continue to beat until light and fluffy. Blend in egg and other ingredients gradually. Chill dough for 3 hours. Roll out on floured board to 1/4-inch thickness and cut in finger shaped slices.

Bake at 375deg; for 15 minutes. Makes about 3 to 4 dozen chocolate cookies.
