Xmas Fruit Salad Recipes


Christmas Cranberry Salad

1 lb fresh cranberries, chopped very fine
2 cups sugar (I use less)
1 large Jello gelatin ("or" two small ones)
1 cup walnuts, chopped
1 cup celery, chopped
1 (8 ounce) can pineapples, chopped (save juice)


Mix all dry ingredients together.
Make jello in half the required water.
Add jello liquid, juice from pinapple.
Mix thouroughly.
Place in a bowl or a mold.
Put in refrigerator until sets.
Serve with dinner.


Xmas Salad

This main dish salad for two is made with shrimp, arugula, avocado, sprouts, cotija cheese, and a lime-olive oil dressing.

1 cup arugula or lettuce
1 avocado
10 medium, peeled & deveined shrimp
1/2 cup sprouts
Juice of 2 limes
1/2 cup olive oil
1/4 cup cotija cheese or Parmesan
Salt and pepper to taste

Clean and tear arugula or lettuce. Cut avocado into bite sized pieces. Quickly pan-fry shrimp. Mix all ingredients together and shred cotija for garnish. Combine lime juice and olive oil for a fresh dressing. Salt and pepper dressing to taste.


Christmas Spinach Salad


baby spinach
raspberry vinaigrette dressing
chopped red delicious apples
dried cranberries
honey-roasted almonds (chopped, sliced or whole!)

Toss Baby Spinach in a large bowl with te Raspberry Vinagrette dressing and place on salad plates.
Top with Chopped Red Delicious Apples, Dried Red Cranberries and Honey-Roasted Almonds.


Orange Cream Fruit Salad


1 (3.4 ounce) package instant vanilla pudding mix
1 1/2 cups milk
1/3 cup frozen orange juice concentrate
3/4 cup sour cream
1 (20-ounce) can pineapple tidbits, trained
1 (16-ounce) can peach slices, drained
1 (11-ounce) can mandarin orange slices
2 medium bananas, peeled and sliced
1 medium apple, cored and sliced

In a medium mixing bowl, combine pudding mix, milk, and orange juice. Beat with an electric mixer on medium speed for 2 minutes. Mix in sour cream.
In a large salad bowl, combine fruits. Gently fold in orange dressing. Cover, and refrigerate for 2 hours.


Red and Green Slaw recipe


1 1/2 cups chopped green cabbage
1/2 cup chopped red cabbage
1/2 sweet red bell pepper, sliced thinly in long strips

Dressing
1/4 cup mayonnaise
1 teaspoon lime juice
Pinch granulated sugar
1/4 teaspoon garlic powder
Salt

Combine and serve.


Taj Mahal Salad

2/3 cup chopped ripe mango
1/8 teaspoon minced Serrano chili
1 tablespoon lime juice
1/4 cup sesame oil
Dash of salt
Salad:
4 cups torn leafy greens
1 cup crabmeat
1/2 cup diced ripe mango
1 avocado, diced
1 cup original-flavor SunChips, slightly crushed

Spicy Mango Dressing: In food processor puree the 2/3 cup mango, chili, lime juice, and salt. Blend slowly while adding oil until dressing becomes emulsified. Chill in refrigerator. Salad: Toss together salad greens, crabmeat, avocado, and remaining mango. Drizzle Spicy Mango Dressing over salad. Sprinkle with SunChip pieces.

This side dish or appetizer combines torn greens with crabmeat, avocado & diced mango, drizzled with mango-chili dressing and sprinkled with chips.
