Easy Christmas Pudding Recipes
Easy Frozen Christmas Pudding Recipe 1/2 cup chopped candied fruit, peeled 1/2 cups vanilla wafer crumbs 1/2 cup chopped nuts 1/2 cup chopped dates 1/4 tsp. nutmeg grated lemon rind of 1/2 lemon 1/4 tsp. cinnamon 1/4 cup sugar 8 large marshmallows, quartered 1 cup heavy cream, whipped 1/4 cup hot orange juice
Combine first 7 ingredients. Dissolve marshmallows in hot juice. Add sugar to juice mixture. Mix well. Combine with first mixture. Fold in whipped cream. Place in refrigerator. Garnish with green gum drops and red cinnamon candy.
Christmas Pudding
2 c Grated carrot 2 c Grated potato 2 c Raisins 1 c Margarine 2 1/2 c Soft bread crumbs 2 c Currants 1 ts Baking soda 4 tb Sour milk 2 ts Cinnamon 1/4 ts Nutmeg 1 c Flour 2 ts Salt 2 c Brown sugar 1 1/2 c Suet OR 1 ts Allspice
Mix in order given. Turn into well greased heat proof bowl; cover and steam about 3 hours. Takes a medium sized bowl. Serve with brown sugar sauce, or custard, or whatever you like. Tasty pudding!
Caramelised Peach Cake Pudding
1kg small yellow peaches, ripe but firm 30 sugar lumps 4 eggs 150g caster sugar 60g ground almonds 150g flour 200g melted butter
Preheat oven to 360°F (180°C). Gently heat a cake tin (or smaller mould) in the oven. Peel peaches, cut open and remove stones.
Place sugar lumps in saucepan, moisten with a little water and caramelise until lightly golden. Pour into warmed cake tin and spread evenly by tipping, to cover the bottom and walls. Arrange peaches quickly, face down on caramel.
Separate eggs and beat yolks with sugar until white. Add ground almonds, flour and melted butter, mixing for a smooth paste. Beat egg whites until stiff and carefully add to mixture. Pour into cake tin, covering peaches.
Bake in the middle of the oven for 40 to45 minutes. Remove from oven, leave to cool, then turn out in one movement onto a serving plate. Leave to stand for ten minutes, before removing tin or mould.
Christmas Pudding Supreme Recipe
1 can (14 oz.) sweetened condensed milk 2 c. milk 1 pkg. (6 oz.) instant vanilla pudding mix 1 carton (8 oz.) nondairy whipped topping 4 bananas, sliced 1 box (12 oz.) vanilla wafers
Cream the cheese until smooth. Stir in sweetened condensed milk and pudding mix. Fold in half of the whipped topping. Layer pudding, cookies and bananas in dish. Top with remaining topping. Chill. Yield 10-12 servings.
