Breakfast Asparagus and Ham Quiche 2 tablespoons margarine 1/4 cup finely chopped onion 1/4 lb. cooked ham, finely chopped 5 eggs 1 cup heavy cream 1/2 teaspoon dry mustard 1/2 teaspoon salt 2 cups shredded cheddar cheese 1 (9-inch) frozen deep dish pie crust, thawed 1 (15 oz.) can asparagus spears, drained In small skillet saute onion in hot margarine over low heat for 2 to 3 minutes or until tender. Add ham; cook and stir for 1 minute. In a large mixing bowl beat together eggs, milk, mustard, and salt on low speed until combined. Stir in the ham mixture. Sprinkle cheese in bottom of pie crust. Carefully pour egg mixture over cheese. Arrange asparagus on top like spokes on a wheel; press asparagus lightly under surface. Bake in a 325 degree oven for 35 to 45 minutes or until center is set. Let stand for 10 minutes before serving. This attractive breakfast or brunch casserole is always a favorite. Christmas Golden Apple Oatmeal Breakfast Recipe 1/2 cup (about 1/2 medium) diced Golden Delicious apple 1/3 cup each apple juice and water 1/8 tsp salt (optional) - dash each ground cinnamon and nutmeg 1/3 cup quick-cooking roled oats, uncooked Combine apples, juice, water, and seasonings; bring to boil. Stir in rolled oats; cook for 1 minute. Cover and let stand several minutes before serving. Perfect Scrambled Eggs 4 large eggs 2 tablespoons water 1 tablespoon sour cream 1 tablespoon butter 1/2 cup shredded cheddar cheese Salt and pepper Melt the butter in a heavy skillet over medium high heat. Break the eggs into a bowl with 2 tablespoons of water. Add 1/4 teaspoon salt and a dash of pepper. Whisk or stir with a fork until eggs are a uniform yellow. Stir in the sour cream. Pour egg mixture into skillet. As mixture begins to set at the bottom and side, gently lift cooked portions with a spatula so that uncooked portion can flow to the bottom. Cook until eggs are thickened throughout, about 3 to 5 minutes. Top with grated cheddar cheese before serving. Makes 2 servings. Christmas Breakfast Pie Easy Recipe 2 browned pie crusts 4 eggs 8 ounces shredded mozzarella cheese 8 ounces shredded cheddar cheese 1 lb smithfield ham sausage, browned and drained 1/2 cup milk Put half of browned sausage in each pie shell. Combine cheeses and divide between pie shells. Combine milk and eggs, divide in half and pour over each pie. Bake at 350 degrees until top is browned and eggs set (approximately 30 minutes). Serve warm with biscuits and fresh fruit. |
