Buttermilk Biscuits

1 1/2 cups   flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup vegetable shortening
1/4-1/3 cup buttermilk
1 tablespoon heavy cream

Heat oven to 400.
Line a baking sheet with parchment paper.
Sift all the dry ingredients together.
Add the shortening to the dry ingredients mixing until combined.
Cover and refrigerate for 20 minutes.
Add the buttermilk and stir until combined.
Roll out and cut out with biscuit cutters as many biscuits as possible.
Brush tops with heavy cream and bake 13-15 minutes.


Christmas Baking Biscuits Recipes


565g - 625g (1lb 4oz - 1lb 6oz) Flour
225g (8oz) Butter
170g (6oz) Sugar
2 Egg Yolks
1 Egg White, lightly beaten
4 tbsp Almonds, chopped
2 tbsp Sugar
1 tsp Almond Extract
Pinch Salt

In a large bowl, cream the butter, gradually adding sugar, beat until light and fluffy.
Add beaten egg and almond extract..
Sift together flour and salt and add to the mixture.
This should produce a pliable dough, chill 30 minutes.
Divide dough into 6 equal portions.
Roll out each portion in to a sausage shape, about 24" long.
Divide each into 2" strips.
Place onto lightly greased baking trays.
Brush with egg white and sprinkle with sugar and almonds.
Preheat oven to 190°C: 375°F: Gas 5
Bake for about 10 minutes or until biscuits feel firm and are lightly browned around the edges.
Allow to cool for a few minutes then remove to wire racks.


Baking Gram Flour Pancakes

100 g gram/chickpea flour
1/2 tsp salt
350 ml iced water
Oil for frying

Mix flour, salt and spices if required together. Gradually add iced water until you get a smooth batter. Heat a little oil in a pan, add a quarter of the batter and cook until the edges are crispy and brown, and the top has dried out. Serve with filling of your choice.

1 250g bar milk chocolate
1 large packet unsalted peanuts

Peel the peanuts if need be, put into a cup.
Bring half a large pan of water to the boil.
Put a smaller pan in the water, add chocolate and melt gently in a tablespoonful of water.
Stir, to help baking chocolate melt.
Pour peanuts into melted chocolate, mix well.
Make 8 peanut and chocolate balls, arrnage on a sheet of kitchen foil and leave to set.

450g (1lb) Flour
340g (12oz) Butter
225g (8oz) Sugar
225g (8oz) Currants
Egg Yolks
Currants
Mace

Sift the flour.
Rub the butter into the flour.
Add enough egg yolks to slacken the mixture.
Mix in the sugar, currants and mace to taste.
Form into small cakes and place on to buttered greaseproof paper.
